Possible meets.... Will Bond of Cullach Brewing
If you take a walk down Princes Street you may be forgiven for being unaware of his hidden gem being there. Take that walk if you haven’t already. If quality craft beer is your thing then this is the place for you. If small batch and local gins is your tipple then this is the place for you too. If delicious, handmade sourdough pizzas are your flavour then this is also the place for you. We really could go on. Did we mention it’s also dog-friendly?
As with every business, things start small. Thanks to the vision and perseverance of this weeks guest, his business has gradually grown and taken more and more positive steps since his passion pushed him towards taking the plunge and going it alone. And when you dig a little bit deeper and take notice of these successes, you get the feeling he’s not done yet either.
This week, Possible meets..... Will Bond of Cullach Brewing.
Can you tell us a bit about your business?
Of course! I own and run a microbrewery and taproom based on Perth’s Princes Street. We have a small selection of beers that we brew on site and a much larger selection of rotating guest craft beers on draught and small pack. We have also just recently opened our sourdough pizza kitchen! The taproom is intended to be a cosy, inclusive space for all.
How has the last 12 – 18 months been for you professionally and personally throughout the COVID-19 situation?
A bit of a nightmare to be honest; we had only just opened in our new space and like everyone else, it was time to close again. We are grateful for our customers who continued to place orders for beer throughout lockdown which we provided for home delivery as well as collection at the taproom. When we reopened earlier this year, it felt like starting from scratch, but we have happily watched numbers steadily grow.
Tell us about the first time you ever moved out of your family home and rented/bought your first property?
When I first went to uni, I moved straight into living in halls. It felt great to be away from the rules of the family home, but it was still a very sheltered environment with lots of others in the same situation. The first place I bought was 6 years ago down in County Durham, close to Catterick where I used to be based with my previous job in the army. It had the most stunning views out of the back of uninterrupted hills and countryside. We of course sold it when it was time to move back home to Scotland and start the microbrewery.
Which parts of Perthshire have you lived in and are there any that you liked the most?
I was born and raised in Deeside, Aberdeenshire and my wife is from Germany, so before moving a couple of years ago, we hadn’t spent much time in Perthshire. Until now, we have been renting in the city itself. Saying that, we have had plenty of time to look around and explore the area. Whilst I would be happy living just about anywhere, I would love a big garden and my wife really likes the Dunkeld + Birnam area.
What’s your favourite room in your home and why?
Easily the living room. A space to relax after work and play with the kids and dog.
In your opinion, what is it that makes a house a home?
I think that’s different for everyone, but for me it’s somewhere I feel comfortable, surrounded by the people most important to me. And a garden!
Why do you think Perthshire is such a popular location for buyers from all over parts of Scotland and the UK?
Perthshire has a hell of a lot going on. We have an excellent food and drink scene, the arts are very active here, and the countryside is absolutely stunning. Couple that with how accessible the rest of Scotland is, I find it hard to see what the drawbacks are.
If you could have your dream home, anywhere in the world, where would it be and tell us a bit about what it might have in it and look like?
I would still go for right here in Scotland. If money were no object, it would have to have a very large garden, a big workshop full of machines and tools to spend my retirement making all kinds of furniture.
